I saw the film about two years ago. It didn’t mention that Trotter cooked just about everything sous-vide and that he drank himself to death. Nonetheless he was, according to a highly-respected American chef “a very good chef”. I went to his restaurant one time near the end of his life. He was in Mexico looking at places to start another restaurant. We were the only customers. One of the few people in the kitchen boasted about sous-videing everything.
