Use an air fryer instead! I always think of these very cheffing, very restauranty recipes as a jumping off point and just take elements from them that are achievable at home.
It's been the trend for a very long time. They become Sainsbury's Locals or flats. On the other hand, there are a number country pubs being renovated into smart inns, like The Swan and The Great Bustard that I've reviewed in Smashed. I keep getting invites to review similar places so it's not all bad news. The thing is pubs used to be a cheap night out and now a round will set you back £30 minimum for 4 (unless you're in a Wetherspoons) so people either stay in with supermarket booze or go to restaurants.
Yeah the cheap night out is no joke! I was in Somerset and Wiltshire last year and I could not believe that pints were £7 or £8. I also left England about 10 years ago so that ages my impression of things. Sainsbury’s Local, yikes!
Are we talking the difference between using gelatine as opposed to rennet, or are there other differences? I'm not a junket expert unless it's of the press variety.
Yes! Junket is milk & rennet. I can see why for that competition you'd want to keep the heritage name while updating the pudding, but it's still not junket.
I've just checked and there is availability for all the dates for Glorious Goodwood if that's when you are planning to go. They are just sold out for 19 July when the Cowdray Gold Cup is on.
I loved the sound of the duck recipe until...I realised I've just used up my last 5 litres of spare duck fat.

I was very sad to read six pubs a week are closing!

I object to a milk jelly set with gelatine being called junket!

That looks damn nice , will book for Goodwood racing !
Great idea but you better be quick! We wanted to stay for the Polo at Cowdray in July and it was already fully booked.
Bollocks !
