A career-spanning interview with the legendary British chef

Chef Mark Hix joined me from his Charmouth home on 3 November 2025 to talk about his career that has encompassed his role as Chef Director of Caprice Restaurants during the heyday of The Ivy and Le Caprice in the 90s, and running his own restaurant group in 2010s, both of which helped shape the current restaurant scene. It’s a lively and entertaining chat featuring Madonna, Damien Hirst, stolen recipes, ‘cockshot’ and some bad business.
